Springtime Pasta

The crisp asparagus, fresh lemon, and lovely green pesto make this the best way to welcome in spring. It’s a super easy dish that comes together quickly and so delicious. Here’s how to make it:

Ingredients:

1 container of Trader Joe’s Vegan Kale, Cashew & Basil Pesto

½ box of pasta 

1 bunch of asparagus 

 10 oz of peas (I used the fresh English peas from Trader Joe’s)

1 package of garlic chicken sausage 

Freshly shaved Parmesan to taste 

1 lemon 

Directions:
Start with veggie prep - wash and cut the asparagus lengthwise 3 to 5 times. 

Then cut up the chicken sausage into slices. 

Once the asparagus is cut, add it to a pan on medium heat with some avocado oil. After 2-3 minutes, add in the peas. 

Boil some water with salt for the pasta. 

Once the vegetables are cooked through (about 8-10 mins) set aside. Add the chopped garlic chicken sausage on medium high heat. 

Cook the pasta according to package directions - reserve some pasta water when draining. 

Once the chicken sausage is cooked, add in the pasta, the full container of pesto, the vegetables, and a nice splash of pasta water. Mix thoroughly. Then top with the parmesan cheese and a squeeze of fresh lemon. Serve and enjoy!
