Easy Ricotta & Spinach Stuffed Shells

Need something cozy and delicious to make for Sunday night dinner? Try these Ricotta & Spinach Stuffed Shells 👇

  • First thing’s first: the sauce. I made mine homemade with garlic, onion, crushed tomatoes, salt, pepper, sugar, & Italian seasonings and simmered for 30 minutes. For a short cut you can use jarred!

    • Next, boil the pasta shells until Al dente (~10 minutes)

    • While the shells are cooking we can work on our filling. I heated up some olive oil over medium low heat then added some chopped garlic. Add half a bag of spinach with salt & pepper. Cook down

    • Add spinach mixture to a bowl with ricotta cheese, freshly grated Parmesan & mozzarella, salt, pepper, & Italian seasonings

    • Line a baking dish with some sauce, then spoon the mixture into each shell and place on the baking dish. Top with extra sauce & shredded cheese

    • Cover & cook at 425 for ~20 minutes. Once done top with fresh basil

    Serve and enjoy!
